1 cup of chopped onion
5 pieces of chopped garlic
1 cup chopped zucchini
1 cup chopped yellow squash
2 chopped fresh tomatoes
1 can of pinto beans
2 cans of kidney beans
1 can of black beans
2 large cans of crushed tomatoes
2 sweet potatoes
Olive oil
1 tea spoon of cumin
Chilli powder to taste
Salt to taste
First, cube the sweet potatoes and sauté them until soft in olive oil. Then sauté the chopped veggies in olive oil for 4-6 minutes while sweet potatoes are cooking.
Next add canned tomatoes, soft sweet potatoes, beans and seasoning. Cook on medium for 20 minutes, then enjoy!
